Pasta with Chorizo, Capsicum, Olives and Tomatoes
When I'm in the mood for something hearty and flavourful, I love whipping up a pasta dish. Recently, I decided to combine some of my favourite ingredients, chorizo, yellow capsicum, sundried tomatoes, and black olives with some macaroni pasta. The result was a delicious and satisfying meal that's perfect for any night of the week. It can be cooked up in one pan and in 30 minutes.

- 1 1/2 cup macaroni pasta
- 1/2 cup chorizo sliced
- 1/2 yellow capsicum sliced
- 1/2 cup sliced sundried tomatoes
- 1/4 cup pitted black olives
- 1/2 cup fresh cherry tomatoes halved
- 2 tbsp olive oil
- salt and pepper to taste
- grated parmesan cheese or basil optional
Bring a large saucepan of salted water to the boil and cook the macaroni pasta according to the packet instructions until al dente. Drain and set aside.
In a stainless steel frying pan, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned and crispy.
Add the sliced yellow capsicum to the pan and cook for 2-3 minutes, until tender.
Add the chopped sundried tomatoes and sliced black olives to the pan. Cook for 1-2 minutes, until the flavours are combined.
Add the cooked macaroni pasta to the pan, tossing everything together to combine.
Stir in the fresh cherry tomatoes and cook for a further minute, until they're slightly softened.
Season with salt and pepper to taste, and top with grated Parmesan cheese or basil if desired.

- Add some chopped fresh herbs, such as basil or parsley, for extra flavour.
