Pasta with Chorizo, Capsicum, Olives and Tomatoes

When I'm in the mood for something hearty and flavourful, I love whipping up a pasta dish. Recently, I decided to combine some of my favourite ingredients, chorizo, yellow capsicum, sundried tomatoes, and black olives with some macaroni pasta. The result was a delicious and satisfying meal that's perfect for any night of the week. It can be cooked up in one pan and in 30 minutes.

Ingredients
  

  • 1 1/2 cup macaroni pasta
  • 1/2 cup chorizo sliced
  • 1/2 yellow capsicum sliced
  • 1/2 cup sliced sundried tomatoes
  • 1/4 cup pitted black olives
  • 1/2 cup fresh cherry tomatoes halved
  • 2 tbsp olive oil
  • salt and pepper to taste
  • grated parmesan cheese or basil optional

Instructions
 

  • Bring a large saucepan of salted water to the boil and cook the macaroni pasta according to the packet instructions until al dente. Drain and set aside.
  • In a stainless steel frying pan, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned and crispy.
  • Add the sliced yellow capsicum to the pan and cook for 2-3 minutes, until tender.
  • Add the chopped sundried tomatoes and sliced black olives to the pan. Cook for 1-2 minutes, until the flavours are combined.
  • Add the cooked macaroni pasta to the pan, tossing everything together to combine.
  • Stir in the fresh cherry tomatoes and cook for a further minute, until they're slightly softened.
  • Season with salt and pepper to taste, and top with grated Parmesan cheese or basil if desired.

Notes

Ingredient Swap Ideas:
  • Use different types of pasta, such as penne or fusilli, for a change of texture.
  • Swap the chorizo for other spicy sausages, such as pepperoni or salami.
  • Add some chopped fresh herbs, such as basil or parsley, for extra flavour.
  • Use different types of olives, such as green or Kalamata, for a different flavour profile.

  • A simple green salad or a handful of mixed greens for a fresh contrast.
  • A side of garlic bread or Ciabatta for a more filling meal.
  • A bowl of crudités, such as carrot sticks or cucumber slices, for a crunchy snack.
