Total Time 30 minutes mins
- 450 g grass-fed ground beef
- 2 medium sweet potatoes peeled and diced into small cubes
- 1 small onion finely chopped
- 3 cloves garlic minced
- 2 tbsp grass-fed butter or ghee
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon sea salt or to taste
- 1/4 teaspoon black pepper
- 1/2 cup bone broth or water
- optional toppings: fresh parsley grated raw cheese, or a dollop of sour cream
Sauté the Aromatics: In a large skillet or pot, melt the grass-fed butter or ghee over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Brown the Beef: Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Season with smoked paprika, thyme, sea salt, and black pepper.
Add Sweet Potatoes: Toss in the diced sweet potatoes and stir to combine with the beef mixture. Pour in the bone broth (or water) to help steam and soften the sweet potatoes.
Simmer and Cook: Cover the skillet with a lid and reduce the heat to low. Let it simmer for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.
Serve and Enjoy: Once the sweet potatoes are cooked through, remove the skillet from heat. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley, grated raw cheese, or a dollop of sour cream if desired.
