One-Pot Grass-Fed Beef and Sweet Potato Skillet

Ingredients
  

  • 450 g grass-fed ground beef
  • 2 medium sweet potatoes peeled and diced into small cubes
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 2 tbsp grass-fed butter or ghee
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon black pepper
  • 1/2 cup bone broth or water
  • optional toppings: fresh parsley grated raw cheese, or a dollop of sour cream

Instructions
 

  • Sauté the Aromatics: In a large skillet or pot, melt the grass-fed butter or ghee over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • Brown the Beef: Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Season with smoked paprika, thyme, sea salt, and black pepper.
  • Add Sweet Potatoes: Toss in the diced sweet potatoes and stir to combine with the beef mixture. Pour in the bone broth (or water) to help steam and soften the sweet potatoes.
  • Simmer and Cook: Cover the skillet with a lid and reduce the heat to low. Let it simmer for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.
  • Serve and Enjoy: Once the sweet potatoes are cooked through, remove the skillet from heat. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley, grated raw cheese, or a dollop of sour cream if desired.
