When I’m in the mood for something hearty and flavourful, I love whipping up a pasta dish. Recently, I decided to combine some of my favourite ingredients, chorizo, yellow capsicum, sundried tomatoes, and black olives with some macaroni pasta. The result was a delicious and satisfying meal that’s perfect for any night of the week. It can be cooked up in one pan and in 30 minutes.

The Ingredients:
- 1 1/2 cup of macaroni pasta
- 1/2 cup of chorizo, sliced
- 1/2 yellow capsicum, sliced
- 1/2 cup of sliced sundried tomatoes
- 1/4 cup of pitted black olives
- 1/2 cup of fresh cherry tomatoes, halved
- 2 tbsp of olive oil
- Salt and pepper to taste
- Grated Parmesan cheese or basil (optional)

Instructions:
- Bring a large saucepan of salted water to the boil and cook the macaroni pasta according to the packet instructions until al dente. Drain and set aside.
- In a stainless steel frying pan, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned and crispy.
- Add the sliced yellow capsicum to the pan and cook for 2-3 minutes, until tender.
- Add the chopped sundried tomatoes and sliced black olives to the pan. Cook for 1-2 minutes, until the flavours are combined.
- Add the cooked macaroni pasta to the pan, tossing everything together to combine.
- Stir in the fresh cherry tomatoes and cook for a further minute, until they’re slightly softened.
- Season with salt and pepper to taste, and top with grated Parmesan cheese or basil if desired.
