This is a simple and tasty meal, inspired from a meal that me and my kid really like from a Japanese take away place, I decided to try cooking chicken in the air fryer with a side of rice and cucumber, topped with a tangy teriyaki sauce and mayonnaise drizzle. The result was amazing, and I’m excited to share the recipe with you.

Ingredients:
1-2 boneless, skinless chicken breasts
1 cup of uncooked rice
2 cups of water
1 cucumber, sliced
Teriyaki sauce
Mayonnaise
Salt and pepper to taste
Instructions:
Preheat the air fryer to 180°C. Cook the chicken breasts in the air fryer for about an hour, or until they’re cooked through and tender.
While the chicken is cooking, cook the rice in a saucepan with 2 cups of water according to the packet instructions. My electric hob seems to be better with 2.5 cups of water to get the rice cooked well, so adjust to your stove top.
Once the chicken is cooked, slice it into strips.
To assemble the dish, place a portion of cooked rice on a plate, top with sliced chicken and cucumber.
Drizzle teriyaki sauce and mayonnaise over the top of everything.
