You do need to trust the process of letting food sear before turning, as the food can at times just lift of the pan once it is seared.

If you are searing say a piece of meat, then take that piece of meat out of a frying pan, to then cook up a sauce, if you add a splash of water you can easily lift of any pieces of food that is stuck to the pan.

To reduce how much you need to scrub to get them clean consider soaking them instead of scrubbing, I’ve found a lot of really sticked on food just washes off after soaking the pan for a few hours.
