When I’m looking to cook a special meal, I often turn to steak. There’s something about the combination of a perfectly cooked piece of meat with some delicious vegetables that just hits the spot. Recently, I decided to cook a filet eye steak with some garlic vegetables, and the result was amazing.

The Ingredients:
- 1 filet eye steak (or your preferred cut)
- 2 tbsp of olive oil
- Vegetables of your choice (I used a mix of colourful bell peppers and carrots)
- garlic powder (use how much to your taste preference)
- Salt to taste
- 1 tbsp of butter
- Fresh herbs (I used basil)
The Instructions:
- Heat a frying pan over high heat until water bounces off it when flicked onto the surface. This is a great way to test if your pan is hot enough for searing steak.
- Add 2 tbsp of olive oil to the pan and swirl it around to coat the surface. Add your steak – I sliced mine to help it cook more evenly. Cook to your desired level of doneness, then set aside to rest.
- In the same pan, add 1 tbsp of olive oil and your chosen vegetables. I added a splash of water to help keep the temperature down and slightly steam the vegetables.
- Add a pinch of garlic (or more to taste) and a sprinkle of salt to the pan, and stir to combine.
- Add a tbsp of butter to the pan and mix the vegetables until they’re cooked to your liking.
- To finish, garnish with fresh herbs – I used basil, but parsley or thyme would also work well.
Tips and Variations:
- Use your favourite vegetables in place of the ones I used – mushrooms, carrots, or snap peas would all be great options.
- Adjust the amount of garlic to your taste.
- Add some lemon juice or zest to the vegetables for a burst of citrus flavour.
- Serve the steak and vegetables with your favourite sides, such as mashed potatoes or roasted root vegetables.
